Ralph Waldo Emerson once wrote, "A foolish consistency is the hobgoblin of little minds."  In other words, if you only think one way about certain things in life and never allow other points of view to inform you, then you can never be great.  That may be true in a philosophical sense, but when it comes to making quality barbeque, consistency is the very thing that has made the Hickory Stick great.

It was 1977 when Lynda Petree and her late husband, Barry, opened their first restaurant off North Market Street.  Since that time the Hickory Stick has been serving Shreveport-Bossier diners who crave delicious smoked meats with all the fixin's.

Lynda says, “People love consistency, and that’s what we offer.  We’ve had the same quality food and some of the same employees for forty years.”
